Greek Spotlight: hoocut

Greek Movie News

If you are looking for the intersection of “high-end culinary expertise” and “humble street food,” Hoocut in Athens is the definitive answer. Since its opening, it has redefined the most iconic Greek dish—the souvlaki—by treating it with the same reverence as a Michelin-starred meal.

What Makes It Unique?

Hoocut isn’t your average “souvlatzidiko” (souvlaki shop). It was conceptualized as a “true pitta” experience, moving away from the mass-produced, heavy versions of the dish. Its uniqueness lies in its structure and technique:

  • The “Shop-within-a-Shop” Concept: The interior is designed to look like a small indoor market. It features a dedicated Bakery (making pitta from scratch), a Butchery (where meat is sliced paper-thin), and a Greengrocery (for fresh toppings).

  • Thin-Sliced Meat: Unlike the chunky skewers or thick gyros found elsewhere, Hoocut uses a technique where the meat is finely chopped on a flat grill, resulting in a lighter, more refined texture.

  • No Fries Inside: In a bold move for Greek standards, they traditionally do not put fries inside the wrap, focusing instead on the harmony of meat, sauce, and vegetables.

History & Founders

Hoocut opened in 2018 in the vibrant Agias Irinis Square. It was founded by the five acclaimed chefs behind Cookoovaya (one of Athens’ most prestigious restaurants): Periklis Koskinas, Nikos Karathanos, Kleomenis Zournatzis, and Spyros & Vaggelis Liakos.

Their goal was to “deconstruct” and then “reconstruct” the souvlaki, using high-quality raw materials and professional kitchen discipline to elevate a 4-euro street snack into a gourmet experience.

Menu Highlights

The menu is concise, focusing on execution rather than variety.

  • The Pittas: You can choose between pork, chicken, beef, or mutton (the latter being a rarity and a fan favorite).

  • Vegetarian Options: They offer a standout squid pitta or an eggplant caviar version for those avoiding meat.

  • Open Pie (Skepasti): A larger, more indulgent version of their wraps.

  • Sides: Their Pitta Fries (thin strips of fried pitta bread) served with sauces are a signature accompaniment.

Customer Feedback

Hoocut generally receives high praise for its quality and freshness.

  • The Pros: Customers often rave about the “fluffy, airy” pitta bread and the fact that the food feels “clean” and less greasy than traditional fast food.

  • The Cons: Some traditionalists find the portions smaller than the “brutal” size of neighborhood gyro spots, and the price point is slightly higher, reflecting the artisanal approach.

Significant Events

  • Gordon Ramsay Visit: Hoocut gained international fame when it was featured on the TV show Gordon, Gino and Fred: Road Trip. Ramsay notably praised the authenticity and the craftsmanship of the handmade pitta.

  • Expansion: Following its success in Athens, the brand has expanded with a second location in the suburb of Nea Erythraia, proving that the “fine-dining souvlaki” model has staying power.
